Good things take time, at least that's true for a Sauerbraten. Let it marinate thoroughly, then gently braise it and enjoy meat that practically melts in your mouth.

Store in a dry, cool place, away from sunlight and heat.

Quick Guide

  • 1.2 kg beef roast
  • 7dl red wine
  • 200ml red wine vinegar
  • 2-3 tablespoons of sauerbraten seasoning

Place the meat in a large bowl, add the spice mix, and then pour over the wine and vinegar. Cover the meat and refrigerate to marinate for approximately 4-5 days, turning it once a day.

After removing the meat from the marinade, it is patted dry, the marinade is strained and set aside for the sauce.

Season the meat a little more and fry it over high heat until a crust forms.

Braising: Cover and cook for approximately 3 hours in the center of an oven preheated to 150°C. Turn the roast occasionally.

Variations: replace some of the vinegar with balsamic vinegar, or use cider and apple cider vinegar instead of red wine and red wine vinegar.
