On the other hand, using smoke flavoring allows you to circumvent the numerous regulations that can be associated with the use of a smoking system in the food industry.
Smoke flavoring is a good alternative to the traditional smoking process. It gives the sausage that classic, aromatic smoky flavor. However, smoke flavoring is used solely for flavoring, not for preservation.
Ingredients:
Dextrose, smoke flavoring , table salt
Bonus:
3–5 g per kg of sausage meat
10-15 g per liter of brine
- May contain traces of mustard, celery and gluten.
