Origin
The origin of bell peppers is clearly documented: Columbus brought them back from his voyage of discovery to the Americas – bell peppers, which he himself called "Indian peppers." Since then, bell peppers have become incredibly popular throughout Europe. They are an absolute must in Balkan cuisine. Today, bell pepper varieties are also cultivated in subtropical regions. They thrive in Hungary, Romania, Bulgaria, the Balkans, and throughout the Mediterranean.

Characteristics and cultivation
Bell peppers vary greatly depending on whether they are wild, cultivated, or sweet peppers. Bell peppers are typically red, but sweet peppers also come in yellow and green. They are closely related to chili peppers. Generally speaking, bell peppers are annual plants belonging to the nightshade family. They are grown in fields.

Aroma and Use
The highest quality peppers are known as "delicatessen peppers." They are mild, not too hot. The most popular and probably most common type of pepper is the sweet pepper, a very aromatic and flavorful pepper with a mild, pleasant heat. For hearty meat dishes like goulash, the semi-sweet variety is recommended. It is a bit hotter than the sweet pepper and also stains food very easily.

Rose paprika is also very well-known. Its color is less vibrant, sometimes even a bit yellowish-light red. But it is very aromatic. For anyone who loves spicy flavors, hot paprika is a must. In practice, there are virtually no limits to the uses of paprika as a seasoning.

Bell peppers have a positive effect on digestion, promote the production of gastric juices, and possess antibacterial properties. They are also considered an appetite stimulant. Bell peppers have other health benefits as well. They improve blood circulation and promote sweating. Furthermore, they are particularly rich in vitamin C and carotenoids.

Tip
Bell peppers are essential in goulash and similar dishes. But there's a trick to preparing them. Never add bell peppers directly to boiling hot fat. The reason: Bell peppers naturally contain sugar, and this sugar caramelizes far too easily in hot fat. This causes the bell pepper to lose its typical flavor, leaving only its sweet, caramelized note.
