Only a balanced acid/sugar ratio guarantees good, long-lasting and harmonious wines.
Lactic acid or citric acid are excellent for acid enrichment.
Adding 1.25 g to one liter increases the acidity by 1 g (per mille) per liter. The acidity can be roughly correlated with the alcohol content.
