Coriander seeds, a nerve-calming spice used even by the pharaohs, are primarily used as a bread spice in this country.

The small seeds also season speculaas and gingerbread and refine fish and meat dishes.

Origin

Scientists have discovered small coriander seeds during excavations of Neolithic cultures. Finds in pharaohs' tombs prove that coriander was once given to rulers to take with them to the afterlife, to make their journey to the other world as pleasant as possible. Coriander is also mentioned in the Bible and in ancient Sanskrit texts.

Coriander originally comes from the Mediterranean region, but today it also thrives in Germany, Asia and America.

Characteristics and cultivation

The coriander plant belongs botanically to the Apiaceae family. In cultivation, coriander is an annual or biennial. The plant grows to a height of 30 to 60 centimeters and its leaves are somewhat reminiscent of parsley. Coriander develops white or pale pink flowers. These flowers then develop into spherical fruits. Aroma and Uses: Coriander fruits are three to five millimeters in size, depending on their origin.

Eastern European coriander seeds are larger but have a high essential oil content. North African varieties, on the other hand, are smaller and contain less oil. The seeds are dried, at which point they develop their characteristic aroma. Coriander's main chemical components are linalool and the aldehyde trans-tridecene(2)-al(1). This aldehyde is responsible for the slightly bug-like odor, which has also given coriander the nicknames "bug herb" or "bug dill." Coriander seeds are an ideal accompaniment to cabbage. Game dishes and sauces also gain a special touch with coriander.

Coriander is also an ingredient in curry mixes. Especially in southern Germany, coriander is also very frequently used as a spice for bread and sausages.

Medicine

Traditionally, coriander is used in naturopathy to treat bloating, a feeling of fullness, and mild spasmodic stomach and intestinal disorders. As a tea sweetened with honey, coriander is also effective against colds. Generally, coriander is said to have a calming effect on the nerves.

Tip

Not only are coriander seeds a valuable addition to the kitchen, but the leaves and roots are also usable. The leaves complement Thai, Indian, Mexican, or Brazilian dishes. However, the leaves must be used fresh, as they lose their aroma when dried. The roots must also be used fresh.
