The ideal smoking dust for cold smoking

The Goldspan Beech Smoking Dust B5/10 is a high-quality, dust-free smoking agent made from selected beech wood. Its fine granulation makes it ideal for cold smoking and for smoke generators.

The grain size ranges from 0.5 to 1.0mm, which is our finest smoking dust and well suited for cold smoking, i.e., with smoke temperatures between 15 to 25°C.

Beech is essentially an all-rounder among smoking woods. It is the most commonly used smoking dust and suits both fish and meat.

The high quality is due, on the one hand, to the selected beech wood stocks in local forests. Only the best and natural woods are selected and processed. This ensures quality and provides constant regeneration of raw materials.

On the other hand, the elaborate post-processing stands out. The shredded smoking wood is not simply packaged, but prepared beforehand. Thus, the wood for smoking is first separated into various granulations (like the B5/10), then dedusted, cleaned, and dried.

The result is a first-class Goldspan smoking dust made from beech wood.

What is cold smoking?

The average temperature for cold smoking is between 15 and 25 degrees Celsius. The food to be smoked (meat, fish, cheese) is first brined and then preserved in the smokehouse for several weeks, acquiring a unique smoky flavor.

Ideally, the food to be smoked should have sufficient distance from the embers to prevent it from getting unintentionally too hot.

How long the food should hang in the smokehouse varies greatly. It depends on the food, its thickness, the smoke itself, and also the curing process used.
