Making your own vinegar isn't rocket science. Tiny organisms, called acetic acid bacteria, convert the alcohol in the beverage into acetic acid with the help of oxygen. This process forms a so-called "mother of vinegar," a gelatinous layer. To prevent this from sinking in the liquid, you add floating plastic balls, which initially float on the surface.
