To convert alcoholic beverages into vinegar, tiny organisms called acetic acid bacteria are needed. These bacteria use oxygen to convert the alcohol into acetic acid.

For this process to succeed, the acetic acid bacteria require appropriate living conditions: optimal supply of oxygen, supply of alcohol and nutrients, as well as a constant ambient temperature.

Without bacterial nutrients, the vinegar can ferment more slowly, develop a vinegar mother less effectively, or become slimy.
