Processing instructions

  • PROCESS DRY, DO NOT WET
  • Fill to the recommended fill caliber, clip or tie off.
  • do not dip
  • Coarse spreadable sausage must have a red meat color before the smoking process.
  • Reddening temperature 26°C - 30°C with full air circulation or pre-reddening one day before smoking begins at 20°C
  • Smoke color and taste must be adjusted depending on the system, meaning extending the smoking time or using a colored casing.
  • To achieve a darker smoke color, this can be achieved by allowing the sausage to mature further at approximately 20°C for 1 or 2 days.
  • Unused sections/caterpillars should be carefully repackaged in the bag to prevent drying out. Otherwise, the intestines will no longer be usable.
